Method
Combine the sugar and water in a saucepan over medium heat. Stir until the liquid is completely clear — no need to boil — then cool and store in a sealed jar in the fridge. For rich syrup, warm the water first so the extra sugar dissolves easily.
FAQ
Cups or grams — which is more accurate?
Grams. A cup of granulated sugar is about 200 g and a cup of water about 237 g, so a "1:1 by volume" syrup isn't exactly 1:1 by weight — close enough for drinks, but weigh it if you're being precise.
Can I flavour it?
Yes — add citrus peel, herbs, vanilla or spices while it's warm and steep as it cools, then strain.
Why did my syrup crystallise?
Usually from boiling too hard or stray sugar crystals on the pan sides. Gentle heat and a clean jar fix it.
