Why altitude breaks recipes
Air pressure drops as you climb, so trapped gas expands more easily and liquids boil at a lower temperature. Three things go wrong at once: leavening over-inflates the batter before it can set, moisture evaporates faster leaving things dry, and sugar concentrates as that water leaves, weakening the structure. The fixes mirror the causes — less leavening, less sugar, more liquid, and a hotter oven to set the crumb sooner.
FAQ
Do yeast breads need different treatment?
Yes. Rather than cutting leavening much, shorten the rise — dough proofs far faster up high. Punch down once extra, and watch the dough rather than the clock. A little extra salt (a pinch) also slows fermentation.
What about cookies?
Cookies suffer least. A small flour increase and slightly less sugar controls spreading; leavening cuts are more modest than for cakes.
Does candy making change too?
Very much — water boils cooler, so sugar syrup temperatures must drop about 1°F per 500 feet. See the candy temperature chart, which adjusts for your elevation.
