°C values are the rounded numbers ovens actually use. The exact conversion of 350°F is 176.7°C, but dials are marked in tens, so it is written as 180°C.
How it works
Celsius and Fahrenheit convert exactly with °C = (°F − 32) × 5 ÷ 9. Gas marks step every 25°F from gas mark 1 (275°F), so °F ≈ gas mark × 25 + 250. Fan ovens run hotter for the same dial setting, so the rule of thumb is to subtract about 20°C from the conventional temperature (or bake 10–15% less time).

What is 180°C in Fahrenheit?
180°C is 356°F, universally rounded to 350°F, which is gas mark 4 — the default for most baking.
Why does my fan oven burn things at the recipe temperature?
Most recipes assume a conventional oven. If yours is fan (convection), drop the setting by ~20°C or the outside will be done long before the middle.
Are these temperatures exact?
The math is exact; the chart rounds °C to the tens that oven dials actually show. An oven thermometer is worth more than any chart — most home ovens are off by 10–25°F.
