Ratios are the widely used approximations (instant ≈ 0.75 × active dry ≈ 0.33 × fresh by weight). Yeast is forgiving — small differences mostly change how fast the dough rises, not whether it does.

How it works

By weight, instant yeast is the most concentrated, active dry needs about 25% more, and fresh yeast needs roughly three times as much as instant. Teaspoon amounts assume about 3.1 g per teaspoon for the dry yeasts. Fresh yeast is sold by weight, so it's shown in grams only.

Can I add instant yeast straight to the flour?

Yes. Instant yeast is designed to be mixed into the dry ingredients — no proofing in water needed.

How big is a packet of yeast?

A standard packet is 7 g (¼ oz), which is about 2¼ teaspoons of active dry or instant yeast.

Does more yeast make bread rise better?

It rises faster, not better. A slower rise with less yeast usually builds more flavour, which is the whole idea behind sourdough.
